Reaching the Bentivoglio farming estate (at Vinci, Florence) is like going back in time, back to Italy during the ‘50s with horses, calves, pigs, hens and rabbits (as well as cats and dogs) bred on the estate and therefore in a truly organic way. At the Bentivoglio farming estate it is possible to find wine and oil, even unbottled, direct sale of agricultural products, home-made bread and most of all, people of other times. On our visit here, we will taste the DOCG Chianti produced on the slopes of Montalbano and made using the old method of “Governo all’uso Toscano”, an oenological practice allowed for vinification consisting in a slow second fermentation of the wine which has just been racked with slightly withered grapes of the vine.
